Strawberry White Chocolate Cheesecake
A rich, creamy baked cheesecake with fresh strawberries and a silky white chocolate finish.
Ingredients
Crust
- 1 ½ cups crushed graham crackers
- ⅓ cup melted butter
- ¼ cup refined (granulated) sugar
Filling
- 450 g (16 oz) cream cheese, softened
- 1 cup white chocolate, melted and cooled
- ½ cup granulated sugar
- 2 teaspoons vanilla extract
- 1 large egg
- 1 cup fresh strawberries, finely chopped
Topping
- ½ cup fresh strawberries, chopped
- ¼ cup white chocolate chips, melted
Instructions

Preheat the oven
Preheat your oven to 350°F (175°C). -
Prepare the crust
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar.
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

Make the filling
In a large mixing bowl, beat the softened cream cheese until completely smooth and creamy.
Add the cooled melted white chocolate, sugar, and vanilla extract. Mix until fully blended. -
Add the egg and strawberries
Beat in the egg until just combined, avoiding overmixing.
Gently fold in the chopped strawberries so they are evenly distributed throughout the batter. -
Bake the cheesecake
Pour the filling over the prepared crust and spread it into an even layer.
Bake for 45–50 minutes, or until the edges are set and the center is slightly wobbly. -
Cool in the oven
Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour to cool gradually. -
Chill completely
Remove the cheesecake from the oven and let it come to room temperature.
Refrigerate for at least 4 hours, or preferably overnight, until fully chilled and set. -
Add the topping and serve
Just before serving, sprinkle the top with chopped fresh strawberries and drizzle with the melted white chocolate chips.
Slice and enjoy.
