Spinach Stuffed Pastry

Spinach and Cheese Puff Pastries

A simple, flaky puff pastry filled with creamy spinach and cheese—perfect as an appetizer, snack, or light meal.


Ingredients

  • 2 sheets puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Preparation

1. Preheat the Oven

  1. Set your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and set aside.

2. Prepare the Spinach Filling

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped spinach and sauté for 2–3 minutes, or until the leaves are wilted.
  3. Remove the pan from the heat and allow the spinach to cool slightly.
  4. In a medium mixing bowl, combine:
    • Cooked spinach
    • Ricotta cheese
    • Grated Parmesan cheese
    • Garlic powder
    • Salt and pepper to taste
  5. Stir until the mixture is well combined and creamy.

3. Assemble the Pastries

  1. Lightly flour your work surface and lay out the puff pastry sheets.
  2. Gently roll out each sheet to even the thickness if needed.
  3. Cut each sheet into 4 equal squares, giving you 8 squares in total.
  4. Place a spoonful of the spinach and cheese filling in the center of each square.
  5. Fold each pastry over the filling to form either a rectangle or triangle.
  6. Press the edges firmly with the tines of a fork to seal the pastries.

4. Apply the Egg Wash

  1. Transfer the filled pastries to the prepared baking sheet.
  2. Brush the tops evenly with the beaten egg to help them bake to a glossy, golden color.

5. Bake

  1. Place the baking sheet in the preheated oven.
  2. Bake for 15–20 minutes, or until the pastries are puffed up and richly golden brown.
  3. Remove from the oven and let cool slightly before serving.
