Spinach and Cheese Puff Pastry Rolls

A simple, flaky, and cheesy appetizer that comes together quickly with store-bought puff pastry. Perfect for parties, snacks, or a light meal.

Ingredients

  • 1 sheet puff pastry, thawed (ready-made is perfect)
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 3 cups fresh spinach, roughly chopped
    • Or about 1½ cups cooked/wilted spinach
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground nutmeg (optional, adds warmth and depth)
  • ½ cup ricotta cheese (or use cream cheese for a richer filling)
  • ¼–½ cup shredded cheese (such as mozzarella, cheddar, or a blend)
  • 1 egg, beaten (for brushing the tops)

Equipment

  • Large skillet or saucepan
  • Rolling pin (if the pastry needs rolling out)
  • Baking sheet lined with parchment paper
  • Pastry brush

Step-by-Step Instructions

1. Preheat the Oven

  1. Set your oven to 400°F (200°C).
  2. Line a baking tray with parchment paper and set aside.

2. Make the Spinach and Cheese Filling

Sauté the Onion and Garlic

  1. Warm the olive oil in a large skillet over medium heat.
  2. Add the finely chopped onion and cook for about 3–4 minutes, until soft and translucent.
  3. Stir in the minced garlic and cook for another minute, making sure it doesn’t brown.

Cook the Spinach

  1. Add the chopped fresh spinach to the pan.
  2. Sauté for 1–2 minutes, just until the leaves wilt.
    • If using frozen spinach, thaw completely and squeeze out excess liquid before adding.
  3. Season with salt, pepper, and nutmeg (if using), stirring to combine.

Add the Cheeses

  1. Remove the skillet from the heat.
  2. Stir in the ricotta (or cream cheese) until it’s evenly mixed with the spinach.
  3. Add the shredded cheese of your choice and mix well.
  4. Taste and adjust seasoning if needed.
  5. Let the filling cool slightly before assembling the rolls so the pastry is easier to work with.

3. Prepare the Puff Pastry

  1. Place the thawed puff pastry on a lightly floured surface.
  2. Roll it out (if necessary) to form a rectangle roughly 10 x 12 inches (25 x 30 cm).
  3. Position the rectangle so the longer edge runs horizontally in front of you.

4. Fill and Roll

Spread the Filling

  1. Spoon the spinach and cheese mixture over the pastry.
  2. Spread it into an even, thin layer, leaving about a ½-inch (1–1.5 cm) border all around the edges so it seals well.

Roll the Log

  1. Starting from one of the long sides, roll the pastry tightly into a log, similar to a cinnamon roll.
  2. Pinch along the seam to seal.
  3. For extra security, you can lightly brush the seam with water or a bit of the beaten egg before sealing.

5. Slice and Arrange

  1. Using a sharp knife, slice the log into 1-inch (2–3 cm) thick rounds.
  2. You should end up with about 8–12 rolls, depending on how thick you cut them and the size of your pastry.
  3. Place each spiral cut-side up on the prepared baking sheet, leaving space between the rolls so they can puff up in the oven.

6. Egg Wash and Bake

  1. Lightly brush the tops and sides of each roll with the beaten egg. This will give them a beautiful golden color.
  2. Transfer the tray to the preheated oven.
  3. Bake for 15–20 minutes, or until the puff pastry is risen and a deep golden brown.
  4. Check near the end of the baking time to avoid over-browning.

7. Serve

  1. Let the rolls cool briefly on a wire rack so they set but remain warm.
  2. Serve warm for the best flaky texture and gooey cheese center.

Tips and Variations

  • Cheese Options
Swap or combine cheeses to change the flavor:

    • Feta for a tangy, Mediterranean twist

    • Parmesan for a sharper, salty kick
  • Herb Add-Ins
Stir fresh herbs into the filling for extra freshness:

  • Flavor Boosters
Mix any of these into the filling for more complexity:

    • Crumbled cooked bacon
    • Chopped sun-dried tomatoes
    • Sautéed mushrooms
  • Make-Ahead Option

    • Assemble the filled log, slice into rolls, and place them on a baking sheet.
    • Cover and refrigerate for a few hours before baking.
    • Chilling can help the pastry hold its shape and puff nicely.
  • Freezer-Friendly

    • Arrange the unbaked rolls on a tray and freeze until solid, then transfer to a freezer bag or container.
    • Bake straight from frozen, adding a few extra minutes to the baking time until they are fully puffed and golden.

Enjoy these flaky, golden Spinach and Cheese Puff Pastry Rolls as a savory snack, a crowd-pleasing appetizer, or serve them alongside soup or salad for a simple, satisfying meal.
