Spinach Feta Filo Triangles Recipe

These crispy spinach and feta filo triangles are perfect as an appetizer, snack, or party finger food. Light, flaky, and full of flavor, they’re easy to make and bake in just 15 minutes.


Ingredients

For the filo layers

  • 1 egg
  • 125 ml (½ cup) milk
  • 125 ml (about ⅗ cup) vegetable oil
  • 2 tablespoons water
  • 1 teaspoon salt

For the filling

  • Cooked spinach (well-drained)
  • Feta cheese
  • Salt and pepper, to taste

For assembling and baking

  • 3 sheets of filo (phyllo) dough
  • 1 egg yolk (for brushing)
  • Poppy seeds (for sprinkling)

Instructions

  1. Prepare the egg mixture
    In a mixing bowl, whisk together the egg, milk, vegetable oil, water, and salt until smooth.

  2. Layer the filo dough

    • Place one sheet of filo dough on a clean work surface.
    • Lightly pour some of the egg mixture over the sheet and spread it evenly to coat the entire surface.
    • Repeat this process with the second and third sheets, stacking them to create a total of 3 layers, each brushed with the mixture.
  3. Make the filling

    • In a separate bowl, combine the cooked, drained spinach with crumbled feta cheese.
    • Season with salt and pepper to taste, mixing well.
  4. Assemble the roll

    • Spread the spinach and feta mixture evenly over the layered filo.
    • Starting from one edge, roll the filo tightly into a long strip or log.
  5. Cut into triangles

    • Using a sharp knife, cut the roll into triangle-shaped pieces.
    • Arrange the triangles on a baking sheet lined with parchment paper.
  6. Brush and top

    • Brush each triangle with egg yolk.
    • Sprinkle poppy seeds over the top for extra flavor and crunch.
  7. Bake

    • Preheat the oven to 180°C (356°F).
    • Bake the triangles for about 15 minutes, or until golden brown and crisp.
