Crispy Spinach and Feta Filo Triangles
These spinach and feta filo triangles are light, flaky, and full of savory flavor. Made with delicate filo pastry, a simple milk-and-oil mixture, and a classic spinach-feta filling, they are perfect as an appetizer, snack, or party bite.
Ingredients
- 125 ml milk
- 125 ml vegetable oil
- 2 tablespoons water
- 1 teaspoon salt
- Spinach
- Feta cheese
- Salt, to taste
- Black pepper, to taste
- 3 sheets or rolls of filo dough
- Poppy seeds
- 1 egg yolk
Instructions
-
In a bowl, combine the milk, vegetable oil, water, and salt. Stir well until the mixture is smooth.
-
Place one sheet of filo dough on a flat surface. Drizzle or brush a small amount of the liquid mixture over it, making sure it is evenly spread.

-
Add a second filo sheet on top and repeat the same process. Do this once more so you have 3 layers of filo pastry.
-
In a separate bowl, mix the feta cheese with the cooked spinach. Season with a little salt and pepper if needed.
-
Spread the spinach and feta filling over the layered filo dough.
-
Roll the dough from one side to the other to form a long strip.
-
Cut the strip into triangle-shaped pieces and place them on a baking tray lined with baking paper.
-
Brush each triangle with egg yolk.
-
Sprinkle poppy seeds over the top.
-
Bake in a preheated oven at 180°C (356°F) for about 15 minutes, or until golden and crisp.
Serving Suggestion
Serve these golden filo triangles warm and enjoy their crunchy texture with the rich spinach and feta filling. They are ideal for breakfast, brunch, or as a quick savory snack.
