Roll recipe for poppies from seeds

Soft Poppy Seed Rolls

Fluffy, golden, and lightly speckled with poppy seeds, these homemade rolls are perfect for breakfast, brunch, or as a side for any meal.


Ingredients

For the dough

  • 4 cups all-purpose flour
  • 1 packet (2¼ teaspoons) active dry yeast
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 cup warm milk (110°F / 45°C)
  • 1/4 cup melted butter
  • 2 large eggs
  • 2 teaspoons poppy seeds

For the egg wash

  • 1 egg
  • 1 teaspoon water

Instructions

1. Prepare the dough

  1. In a small bowl, dissolve the yeast in the warm milk.
    Let it sit for about 5 minutes, until the mixture becomes foamy.

  2. In a large mixing bowl, combine the flour, sugar, and salt.

  3. Pour the yeast mixture, melted butter, and eggs into the dry ingredients.
    Stir until a soft dough begins to come together.

  4. Add the poppy seeds and mix until evenly distributed.

  5. Turn the dough out onto a lightly floured surface and knead for 8–10 minutes,
    or until smooth, elastic, and slightly springy to the touch.


2. First rise

  1. Lightly grease a clean bowl and place the dough inside.
  2. Cover with a clean kitchen towel and let rise in a warm place for 1–1½ hours,
    or until the dough has doubled in size.

3. Shape the rolls

  1. Gently punch down the risen dough to release any air bubbles.
  2. Divide the dough into 12 equal portions.
  3. Shape each portion into a smooth ball to form individual rolls.
  4. Arrange the rolls in a greased baking pan or muffin tin, leaving a little space between them so they can rise and form a round shape.

4. Second rise

  1. Cover the shaped rolls with a cloth.
  2. Let them rise again for 30–45 minutes, or until they are noticeably puffy and nearly doubled in size.

5. Make the egg wash

  1. In a small bowl, whisk together the egg and water until well blended.

6. Bake the rolls

  1. Preheat your oven to 375°F (190°C).
  2. Gently brush the tops of the risen rolls with the egg wash.
  3. Bake for 15–20 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.

7. Cool and serve

  1. Remove the rolls from the oven and transfer them to a wire rack to cool slightly.
  2. Serve warm or at room temperature.
