Instructions

1. Bloom the gelatin

  1. Place the gelatin powder in a small bowl.
  2. Add the cold water and gently stir.
  3. Let it sit for about 5 minutes until the gelatin absorbs the water and swells.

2. Prepare the caramel base

  1. Add the sugar to a saucepan and set it over medium heat.
  2. Allow the sugar to melt undisturbed, swirling the pan occasionally but not stirring, until it turns a rich golden-brown color.
  3. Carefully pour in the milk while stirring constantly. The caramel may bubble vigorously—keep stirring until the caramel fully dissolves into the milk.

3. Warm the cream mixture

  1. Pour the heavy cream into the caramel milk mixture.
  2. Add the caramel sauce, vanilla extract, and a pinch of salt.
  3. Stir well and heat gently over medium-low heat until the mixture is warm and smooth. Do not let it come to a boil.

4. Add the gelatin

  1. Remove the saucepan from the heat.
  2. Add the bloomed gelatin to the warm caramel cream.

5. Strain and portion

  1. Pour the mixture through a fine-mesh strainer into a large bowl or jug to remove any undissolved bits.
