- 8 slices rye bread, cubed (marble rye also works well)
- 4 large eggs
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 1 tsp caraway seeds (optional, for a classic deli-style flavor)
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. Build the Bread Layer
Spread the cubed rye bread evenly over the bottom of the prepared dish.
Drizzle the melted butter over the bread to add richness and flavor.

3. Add the Reuben Layers
Layer the remaining ingredients as follows:
- Scatter half of the corned beef over the bread.
- Spoon half of the sauerkraut over the beef.
- Sprinkle half of the shredded Swiss cheese on top.
- Repeat with the remaining corned beef, sauerkraut, and Swiss cheese to create a second layer.
4. Prepare the Egg Mixture
In a medium bowl, whisk together:

- Milk
- Thousand Island dressing
- Caraway seeds (if using)
Season the mixture with salt and pepper to taste.
5. Pour and Bake
- Pour the egg mixture evenly over the layered ingredients in the baking dish.
- Press down gently with a spatula to help the bread soak up the liquid.
- Cover the dish tightly with foil and bake for 20 minutes.
6. Finish Baking
Remove the foil and continue baking for an additional 10–15 minutes, or until:
- The cheese is fully melted and bubbling
- The casserole is set in the center
7. Garnish and Serve
Allow the Reuben Bake to cool for a few minutes.
Sprinkle with chopped fresh parsley, slice into portions, and serve warm.
Tips for the Best Reuben Bake
- Add crunch: For a crisp, golden top, switch the oven to broil for the last 2–3 minutes of baking. Watch closely to prevent burning.
- Extra creamy finish: Drizzle additional Thousand Island dressing over each serving.
- Gluten-free option: Use your favorite gluten-free bread in place of rye to make this casserole gluten-free.
