Ingredients

Shortbread Layer

  • 1 cup all-purpose flour
  • 3/4 cup light brown sugar, firmly packed
  • 1 cup unsalted butter, softened
  • 1/2 cup finely chopped pecans

Cheesecake Layer

  • 2 packages (8 ounces each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla extract

Pecan Pie Layer

  • 1 cup light brown sugar, firmly packed
  • 1/2 cup light corn syrup
  • 1/2 cup butter, melted and slightly cooled
  • 3 large eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup pecans

Instructions

Step 1: Preheat the Oven

  1. Set your oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking pan or line it with parchment paper for easier removal.

Step 2: Make the Shortbread Base

  1. In a medium bowl, whisk together the flour and 3/4 cup light brown sugar.
  2. Add the softened butter and cut it into the dry ingredients using a pastry cutter or fork until the mixture forms coarse, crumbly pieces.
  3. Stir in the 1/2 cup chopped pecans.
  4. Press this mixture firmly and evenly into the bottom of the prepared pan.
  5. Bake for about 10 minutes, then remove from the oven and allow the crust to cool slightly, about 10–15 minutes.

Step 3: Prepare the Cheesecake Layer

  1. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
  2. Gradually pour in the milk and add the vanilla extract, beating until the mixture is fully blended and silky.
  3. Spread the cheesecake mixture evenly over the cooled shortbread crust.

Step 4: Mix the Pecan Pie Topping

  1. In a separate bowl, whisk together the brown sugar, corn syrup, melted butter, beaten eggs, salt, and vanilla until the mixture is smooth and well combined.
  2. Fold in the 1 cup of pecans.
  3. Carefully pour this pecan mixture over the cheesecake layer, spreading it out evenly so it covers the surface.

Step 5: Bake and Cool

  1. Return the pan to the oven and bake at 350°F (175°C) for 35–40 minutes, or until the pecan layer is set and the top is a deep golden brown.
  2. Remove the pan from the oven and let the dessert cool completely in the pan.
  3. Once fully cooled, slice into squares or bars and serve.

Tips for Perfect Pecan Cheesecake Squares

  • Start with room temperature ingredients: Softened cream cheese blends more easily, giving you a smooth cheesecake layer without lumps.
  • Let it cool completely: Cutting too soon can cause the layers to slide or blur. Cooling fully helps you achieve clean, defined layers.
  • Experiment with nuts: While pecans are classic, you can swap in or combine walnuts, almonds, or other nuts for a different flavor and texture.

These Pecan Cheesecake Squares bring together the buttery crunch of shortbread, the velvety richness of cheesecake, and the caramelized sweetness of pecan pie—all in one irresistible bite.
