Savory Stuffed Fried Bread

Ingredients

  • 1 large egg
  • 200 ml warm milk
  • 200 ml warm water
  • 10 g active dry yeast
  • 20 g granulated sugar
  • 8 g salt
  • 540 g all-purpose flour
  • 1 potato, peeled and finely diced
  • 1 red bell pepper, finely diced
  • 2 green peppers, finely diced
  • 1 onion, finely chopped
  • A small handful of fresh parsley, finely chopped
  • 80 g Tulum cheese (or another crumbly cheese), crumbled
  • 400 ml vegetable oil, for frying

Instructions

1. Make the Dough

  1. In a large bowl, combine the warm water, sugar, and dry yeast. Stir and let rest for 5–10 minutes, until the mixture becomes foamy.
  2. Add the warm milk, egg, and salt, and mix until well combined.
  3. Gradually add the flour, stirring or mixing until you get a soft, smooth dough that is no longer sticky.
  4. Transfer the dough to a lightly floured surface and knead for about 5–7 minutes, until elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place until doubled in size, about 1 hour.

2. Prepare the Filling

  1. Boil the diced potato in salted water until tender, then drain well.
  2. In a pan, heat a little oil and sauté the chopped onion and peppers until softened and fragrant.
  3. Combine the cooked potato, sautéed vegetables, parsley, and crumbled cheese in a bowl. Stir gently to mix, then set aside to cool completely.

3. Shape the Breads

  1. Once the dough has risen, punch it down to release the air.
  2. Divide the dough into small, evenly sized pieces and shape each piece into a ball.
  3. On a lightly floured surface, roll each ball into a small circle.
  4. Spoon some of the filling into the center of each circle.
  5. Fold the dough over the filling to form a half-moon shape, then press the edges firmly to seal. You can crimp with your fingers or a fork to secure.

4. Fry

  1. Heat the oil in a deep pan over medium heat.
  2. When the oil is hot, carefully add the stuffed breads in batches, taking care not to overcrowd the pan.
  3. Fry until they are golden brown on both sides, turning as needed.
  4. Remove and place on paper towels to drain excess oil.
