Preparation
-
Preheat the oven
Set your oven to 400°F (200°C). Lightly grease a baking dish with a bit of olive oil or a non-stick cooking spray. -
Season the shrimp
In a mixing bowl, add the shrimp along with olive oil, minced garlic, paprika, dried oregano, salt, and pepper. Toss well until every piece of shrimp is evenly coated with the seasoning. -
Arrange in the baking dish
Spread the seasoned shrimp in a single layer in the prepared baking dish. Lay lemon slices over the top to boost both flavor and appearance.
-
Bake the shrimp
Transfer the dish to the preheated oven and bake for about 10–12 minutes, or until the shrimp turn pink and opaque and are just cooked through. -
Start the lemon butter sauce
While the shrimp are in the oven, place a small saucepan over low heat and gently melt the unsalted butter. -
Finish the sauce
Once the butter has melted, stir in the lemon juice, lemon zest, chopped fresh parsley, plus a pinch of salt and pepper. Let the mixture simmer softly for a few minutes so the flavors blend together. -
Combine shrimp and sauce
When the shrimp are done, remove the baking dish from the oven and generously drizzle the warm lemon butter sauce over the top. -
Garnish and serve
Sprinkle with extra chopped parsley and serve with additional lemon wedges for squeezing over the shrimp just before eating.
