Banana Pudding with Bananas Foster Topping

A rich, creamy banana pudding topped with caramelized Bananas Foster – perfect for an elegant yet comforting dessert.


Ingredients

For the Banana Pudding

  • 6 egg yolks
  • 125 g sugar
  • 1 teaspoon vanilla extract
  • 2 ripe bananas
  • 1 liter milk
  • 3 tablespoons cornstarch
  • 20 ml milk (for dissolving cornstarch)

For the Bananas Foster Topping

  • 10 g butter
  • 50 g sugar
  • 1 banana

Instructions

1. Prepare the Egg Mixture

  1. Separate 6 eggs, placing the yolks into a large mixing bowl (set aside the whites for another recipe).
  2. Add the sugar and vanilla extract to the yolks.
  3. Whisk until the mixture is smooth, pale, and well combined.

2. Add the Bananas

  1. In a separate bowl, mash the ripe bananas with a fork until no large chunks remain.
  2. Transfer the mashed bananas to the egg yolk mixture.
  3. Mix thoroughly until fully incorporated.

3. Incorporate the Milk and Cornstarch

  1. Pour the 1 liter of milk into the banana–egg mixture, whisking as you pour to blend evenly.
  2. In a small bowl, add the cornstarch and 20 ml of milk.
  3. Stir until the cornstarch is completely dissolved and forms a smooth slurry.
  4. Pour this cornstarch mixture into the main bowl and whisk again to combine everything well.

4. Cook the Pudding

  1. Transfer the mixture to a saucepan.
  2. Cook over low heat, stirring constantly with a whisk to prevent sticking or burning.
  3. Continue to cook for about 10 minutes, or until the mixture thickens to a pudding-like consistency.

5. Chill the Pudding

  1. Pour the thickened pudding into 4 small dessert cups or ramekins.
  2. Let them cool to room temperature.
  3. Once cooled, refrigerate until set.

Prepare the Bananas Foster Topping

6. Make the Caramelized Bananas

  1. Add the butter to a pan and melt it over medium heat.
  2. Sprinkle in the sugar and stir well.
  3. Cook until the sugar fully dissolves and turns into a light golden caramel.
  4. Slice the banana and add the slices to the caramel mixture.
  5. Stir gently, coating the banana slices in the caramel. Cook until the bananas are softened and well glazed.

Assemble and Serve

  1. Spoon the warm Bananas Foster mixture over the chilled banana pudding in each cup.
  2. Return the cups to the refrigerator and chill for at least 3 hours, or until completely firm and cold.
