Spinach and Cheese Puff Pastries
A simple, flaky puff pastry filled with creamy spinach and cheese—perfect as an appetizer, snack, or light meal.
Ingredients
- 2 sheets puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten (for egg wash)
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
Preparation
1. Preheat the Oven
- Set your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and set aside.
2. Prepare the Spinach Filling
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped spinach and sauté for 2–3 minutes, or until the leaves are wilted.
- Remove the pan from the heat and allow the spinach to cool slightly.
- In a medium mixing bowl, combine:
- Cooked spinach
- Ricotta cheese
- Grated Parmesan cheese
- Garlic powder
- Salt and pepper to taste
- Stir until the mixture is well combined and creamy.
3. Assemble the Pastries
- Lightly flour your work surface and lay out the puff pastry sheets.
- Gently roll out each sheet to even the thickness if needed.
- Cut each sheet into 4 equal squares, giving you 8 squares in total.
- Place a spoonful of the spinach and cheese filling in the center of each square.
- Fold each pastry over the filling to form either a rectangle or triangle.
- Press the edges firmly with the tines of a fork to seal the pastries.
4. Apply the Egg Wash
- Transfer the filled pastries to the prepared baking sheet.
- Brush the tops evenly with the beaten egg to help them bake to a glossy, golden color.
5. Bake
- Place the baking sheet in the preheated oven.
- Bake for 15–20 minutes, or until the pastries are puffed up and richly golden brown.
- Remove from the oven and let cool slightly before serving.
