Apple-Chocolate Mousse

Ingredients

  • 250 g (8.8 oz) dark chocolate
  • 800 g (28 oz) apples
  • 2 star anise (optional)
  • 1 cinnamon stick (optional)
  • Orange zest (optional)

Instructions

  1. Prepare the apples
    Peel the apples and cut them into small cubes or chunks.

  2. Cook the apples
    Place the apples in a saucepan over medium heat with a splash of water.

  3. Add optional spices
    If you like, add the cinnamon stick, star anise, and some orange zest to the pan to infuse extra flavor. Cook until the apples are very soft and tender.

  4. Blend into a puree
    Remove and discard the spices, if used. Blend the cooked apples until you get a smooth, lump-free puree.

  5. Melt the chocolate
    Gently melt the dark chocolate in a heatproof bowl set over a pot of simmering water (double-boiler method), or melt it in short bursts in the microwave, stirring in between.

  6. Combine chocolate and apple puree
    Stir the melted chocolate into the apple puree, mixing well until the mixture is completely uniform.

  7. Chill the dessert
    Pour the chocolate-apple mixture into serving glasses or small bowls. Refrigerate for a minimum of 2 hours, or until set and nicely chilled.

  8. Serve
    Serve straight from the fridge and enjoy this rich, fruity chocolate dessert.


Serving Tip

  • Top with whipped cream, a dusting of cocoa powder, or a few chocolate shavings for an elegant finish.
