Soft Poppy Seed Rolls
Fluffy, golden, and lightly speckled with poppy seeds, these homemade rolls are perfect for breakfast, brunch, or as a side for any meal.
Ingredients
For the dough
- 4 cups all-purpose flour
- 1 packet (2¼ teaspoons) active dry yeast
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1 cup warm milk (110°F / 45°C)
- 1/4 cup melted butter
- 2 large eggs
- 2 teaspoons poppy seeds
For the egg wash
- 1 egg
- 1 teaspoon water
Instructions
1. Prepare the dough

In a small bowl, dissolve the yeast in the warm milk.
Let it sit for about 5 minutes, until the mixture becomes foamy. -
In a large mixing bowl, combine the flour, sugar, and salt.

Pour the yeast mixture, melted butter, and eggs into the dry ingredients.
Stir until a soft dough begins to come together. -
Add the poppy seeds and mix until evenly distributed.

Turn the dough out onto a lightly floured surface and knead for 8–10 minutes,
or until smooth, elastic, and slightly springy to the touch.
2. First rise
- Lightly grease a clean bowl and place the dough inside.
- Cover with a clean kitchen towel and let rise in a warm place for 1–1½ hours,
or until the dough has doubled in size.
3. Shape the rolls
- Gently punch down the risen dough to release any air bubbles.
- Divide the dough into 12 equal portions.
- Shape each portion into a smooth ball to form individual rolls.
- Arrange the rolls in a greased baking pan or muffin tin, leaving a little space between them so they can rise and form a round shape.
4. Second rise
- Cover the shaped rolls with a cloth.
- Let them rise again for 30–45 minutes, or until they are noticeably puffy and nearly doubled in size.
5. Make the egg wash
- In a small bowl, whisk together the egg and water until well blended.
6. Bake the rolls
- Preheat your oven to 375°F (190°C).
- Gently brush the tops of the risen rolls with the egg wash.
- Bake for 15–20 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.
7. Cool and serve
- Remove the rolls from the oven and transfer them to a wire rack to cool slightly.
- Serve warm or at room temperature.
