Homemade Chocolate-Covered Coconut Bars
Ingredients
- 1 cup sweetened condensed milk
- 2 cups shredded coconut
- 1½ cups dark chocolate chips (or semi-sweet chocolate, if you prefer)
- 1 tablespoon coconut oil (optional, for a silkier chocolate coating)

Prepare the Coconut Mixture
In a mixing bowl, combine the shredded coconut with the sweetened condensed milk. Stir until the mixture is thick, sticky, and the coconut is evenly coated. -
Shape the Bars
Scoop out about 1–2 tablespoons of the coconut mixture at a time and press it into small rectangular bar shapes. Arrange the shaped bars on a baking sheet lined with parchment paper. Place the tray in the freezer for 15–20 minutes, or until the bars are firm. -
Make the Chocolate Coating
While the bars are chilling, add the chocolate chips and coconut oil (if using) to a microwave-safe bowl. Heat in the microwave in 15–20 second bursts, stirring between each interval, until the chocolate is completely melted and smooth.

Dip and Coat
Remove the chilled coconut bars from the freezer. One by one, dip each bar into the melted chocolate, turning to cover all sides. Let any extra chocolate drip off, then return the coated bars to the parchment-lined baking sheet. -
Chill Until Set
Place the tray in the refrigerator for another 15–20 minutes, or until the chocolate shell has fully hardened. -
