  • 1 kg chicken thighs (bone-in or boneless)
  • 2–3 tablespoons vegetable oil
  • Salt, black pepper, and paprika, to taste

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme (or use fresh, finely chopped)
  • 1 teaspoon dried oregano (or fresh, finely chopped)
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter

Instructions

  1. Season the chicken
    Pat the chicken thighs dry with paper towels. Generously season both sides with salt, black pepper, and paprika.

    Heat the vegetable oil in a large skillet over medium-high heat.
    Add the chicken thighs and cook until they are nicely browned on all sides. Remove the chicken from the pan and set aside.

  3. Build the sauce base
    In the same skillet, add the butter. Once melted, stir in the minced garlic and cook for about 30–60 seconds, until fragrant but not browned.
    Pour in the chicken broth and let it simmer for about 2 minutes, scraping up any browned bits from the bottom of the pan.

  4. Add cream and herbs
    Reduce the heat to medium-low. Stir in the heavy cream, thyme, oregano, and red pepper flakes (if using).

    Return the seared chicken thighs to the pan, turning them to coat well in the creamy sauce.
    Cover the skillet and cook on low heat for 20–25 minutes, or until the chicken is fully cooked through and tender.
