- Cook Time: 25 minutes
- Total Time: 40 minutes
- Yield: 12 rolls
Ingredients
- 1 sheet puff pastry, thawed
- 1 pound (450 g) ground sausage (or cooked sausages, finely chopped)
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1 teaspoon dried Italian herbs (or dried oregano)
- 1 teaspoon garlic powder
- 1 egg, beaten (for egg wash)
- 1 tablespoon sesame seeds or poppy seeds (optional, for topping)
- All-purpose flour, for dusting the work surface
Instructions
1. Preheat the oven
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and set aside.
2. Prepare the sausage filling
- If using raw ground sausage, cook it in a skillet over medium heat until fully browned and no longer pink.
- Drain off any excess fat and allow the sausage to cool slightly.
- In a mixing bowl, combine the cooked sausage, shredded cheese, dried Italian herbs, and garlic powder. Stir until evenly mixed.
3. Roll out the puff pastry
- Lightly flour your work surface.
- Place the puff pastry sheet on the floured surface and roll it into a rectangle approximately 12 x 10 inches (30 x 25 cm).
4. Fill and roll
- Evenly spread the sausage and cheese mixture over the puff pastry, leaving a 1-inch (2.5 cm) border along one long edge.
- Starting from the opposite long side (the side covered fully with filling), roll the pastry up tightly into a log, as you would a jelly roll.
- Brush the empty border with a little beaten egg and press gently to seal the seam.
5. Slice the rolls
- Using a sharp knife, trim the ends if needed.
- Cut the log into 12 equal slices, each about 1 inch (2.5 cm) thick.
6. Brush and add toppings
- Arrange the slices cut-side up on the prepared baking sheet, leaving some space between each roll.
- Brush the tops and sides lightly with the remaining beaten egg.
- Sprinkle with sesame seeds or poppy seeds, if using.
7. Bake
- Bake in the preheated oven for 20–25 minutes, or until the rolls are puffed and deep golden brown.
- Remove from the oven and let them cool on the tray for a few minutes.
8. Serve
Serve the rolls warm so the cheese is soft and melty. They are best enjoyed fresh from the oven.
Serving Suggestions
- Pair with dipping sauces such as marinara, honey mustard, ranch, or spicy mayonnaise.
- Serve alongside a simple green salad or coleslaw for a light meal.
- Add to a brunch board with fresh fruit, boiled eggs, and other pastries.
Pro Tips
-
Boost the flavor:

- Stir finely chopped onions, bell peppers, or scallions into the sausage mixture before rolling.
-
Make ahead and freeze:
- Assemble the sausage roll log, slice into pieces, and freeze the unbaked rolls on a tray until solid.
- Transfer to a freezer-safe bag or container.
- Bake from frozen at 400°F (200°C), adding 5–7 extra minutes to the baking time.
-
Play with cheese varieties:
- Try smoked cheddar, pepper jack, gouda, or a mix of cheeses for different flavor profiles.
