Cheesy Sausage Puff Pastry Rolls Recipe

These cheesy sausage puff pastry rolls combine crisp, buttery layers with savory sausage and melted cheese. They are ideal as a party appetizer, brunch bite, or a cozy snack any time of day.

  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes
  • Yield: 12 rolls

Ingredients

  • 1 sheet puff pastry, thawed
  • 1 pound (450 g) ground sausage (or cooked sausages, finely chopped)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 teaspoon dried Italian herbs (or dried oregano)
  • 1 teaspoon garlic powder
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon sesame seeds or poppy seeds (optional, for topping)
  • All-purpose flour, for dusting the work surface

Instructions

1. Preheat the oven

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and set aside.

2. Prepare the sausage filling

  1. If using raw ground sausage, cook it in a skillet over medium heat until fully browned and no longer pink.
  2. Drain off any excess fat and allow the sausage to cool slightly.
  3. In a mixing bowl, combine the cooked sausage, shredded cheese, dried Italian herbs, and garlic powder. Stir until evenly mixed.

3. Roll out the puff pastry

  1. Lightly flour your work surface.
  2. Place the puff pastry sheet on the floured surface and roll it into a rectangle approximately 12 x 10 inches (30 x 25 cm).

4. Fill and roll

  1. Evenly spread the sausage and cheese mixture over the puff pastry, leaving a 1-inch (2.5 cm) border along one long edge.
  2. Starting from the opposite long side (the side covered fully with filling), roll the pastry up tightly into a log, as you would a jelly roll.
  3. Brush the empty border with a little beaten egg and press gently to seal the seam.

5. Slice the rolls

  1. Using a sharp knife, trim the ends if needed.
  2. Cut the log into 12 equal slices, each about 1 inch (2.5 cm) thick.

6. Brush and add toppings

  1. Arrange the slices cut-side up on the prepared baking sheet, leaving some space between each roll.
  2. Brush the tops and sides lightly with the remaining beaten egg.
  3. Sprinkle with sesame seeds or poppy seeds, if using.

7. Bake

  1. Bake in the preheated oven for 20–25 minutes, or until the rolls are puffed and deep golden brown.
  2. Remove from the oven and let them cool on the tray for a few minutes.

8. Serve

Serve the rolls warm so the cheese is soft and melty. They are best enjoyed fresh from the oven.

    • Stir finely chopped onions, bell peppers, or scallions into the sausage mixture before rolling.
  2. Make ahead and freeze:

    • Assemble the sausage roll log, slice into pieces, and freeze the unbaked rolls on a tray until solid.
    • Transfer to a freezer-safe bag or container.
    • Bake from frozen at 400°F (200°C), adding 5–7 extra minutes to the baking time.
  3. Play with cheese varieties:

    • Try smoked cheddar, pepper jack, gouda, or a mix of cheeses for different flavor profiles.
