Banana Cornmeal Stove-Top Cake Recipe
Ingredients
- 1 ripe banana, mashed
- 1 egg
- 1/2 cup cornmeal
- 2 tablespoons tapioca flour
- 1 teaspoon baking powder
- 1/2 cup milk
- Margarine, for greasing the pan

In a mixing bowl, crack the egg and beat it until light and slightly foamy.

Add the mashed banana, cornmeal, tapioca flour, and baking powder to the bowl. Stir until everything is well combined.

Slowly pour in the milk, mixing continuously until you have a smooth, uniform batter with no lumps.

Lightly grease a pan with a center hole (such as a ring or Bundt-style pan) using margarine. Pour the batter into the prepared pan and spread it evenly.

Cover the pan tightly with aluminum foil or a lid. Place it over medium heat on the stovetop.

Cook for about 30 minutes. Then carefully remove the cake from the pan and transfer it to a second pan.

Return the cake to the heat in the new pan and cook for another 10 minutes to finish setting and browning.

Remove from heat, let it cool slightly, slice, and enjoy.
