Creamy Layered Cheesecake (No-Bake)

A rich, velvety cheesecake layered with smooth vanilla pudding and a buttery graham cracker crust. This no-bake dessert is perfect for parties, holidays, or anytime you’re craving something sweet and creamy.


Ingredients

For the crust

  • 1 ½ cups crushed graham crackers
  • ⅓ cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the cheesecake layer

  • 16 oz cream cheese, softened to room temperature
  • 1 cup powdered (confectioners’) sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups heavy whipping cream

For the topping

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • Extra crushed graham crackers for garnish

Instructions

1. Prepare the crust

  1. In a mixing bowl, combine the crushed graham crackers, melted butter, and sugar.
  2. Stir until the crumbs are evenly moistened and resemble wet sand.
  3. Press the mixture firmly into the bottom of a springform pan or a similar flat-bottomed dish to form an even crust.
  4. Place the pan in the refrigerator to chill while you make the cheesecake layer.

2. Make the cheesecake layer

  1. In a large bowl, beat the softened cream cheese until completely smooth and creamy, with no lumps.
  2. Add the powdered sugar and vanilla extract, then mix until fully incorporated.
  3. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the cream.
  5. Spread this cheesecake mixture evenly over the chilled graham cracker crust.

3. Prepare the topping

  1. In a clean bowl, whisk together the instant vanilla pudding mix and cold milk.
  2. Continue whisking until the mixture thickens and becomes smooth.
  3. Carefully spread the pudding over the cheesecake layer, creating an even top.

4. Garnish and chill

  1. Sprinkle additional crushed graham crackers over the top for a decorative crunch.
  2. Refrigerate the cheesecake for at least 4 hours, or overnight, to allow it to set and develop the best texture.
